Bright ruby-garnet red, with violet reflections and slight lightening at the rim. Delicate tobacco-like notes of liquorice and a hint of sloe, touches of game, a mineral note and floral nuances. Juicy, with predominantly red berry fruit and a fresh, mineral structure; raspberries and lemons on the finish, with a saline note on the aftertaste. Still somewhat untamed, it will benefit from bottle ageing.

Always a good introduction to the wines from this estate, the 2012 Côtes du Roussillon Old Vines is predominantly Syrah, with 25% each of Carignan and Grenache. Aged in older barrels, it has a semi-opaque ruby-purple colour and is a perfumed, elegant red offering classic black cherry stone and raspberry fruit, plenty of resinous herbs, new leather and liquid violet aromas and flavours. Medium-bodied, juicy and lively, with a firm edge to its acidity and tannins, it lacks the depth and richness of the 2011 but has beautiful fruit, remains nicely balanced and has a finish of good length.

Domaine Gauby is a benchmark of the Roussillon. Located in the commune of Calce, twenty kilometres north-west of Perpignan, this 85-hectare family estate — of which 45 are planted with vines — single-handedly transformed the perception of a region that the wine world still regarded with condescension at the beginning of the 1990s. It is Gérard Gauby, a former international rugby player turned winemaker, who elevated the estate to this level of excellence. His son Lionel Gauby, trained in part alongside Olivier Jullien at Mas Jullien, now oversees the winemaking with the same exacting standards.

The conversion to organic farming in 1996 came from a shock: one morning, Gérard Gauby discovered dead birds on a plot that had been treated the day before. He stopped using chemicals overnight, radically. The estate has since been managed using biodynamic methods, with home-made plant-based preparations, agroforestry, and a mixed farming approach that sees almond trees and olive trees growing alongside the vines.

The Gauby style has been refined over the decades towards ever greater freshness and elegance: tannins of a rare grain for the Roussillon, an explosive minerality in the whites, a depth and digestibility that allow the top cuvées to age for ten to fifteen years. The 2014, 2015, 2016, 2018, 2019 and 2021 vintages are among the finest expressions of the estate.
