(08.2021) Aromas of pear, green apple and citrus oil mingling with hints of fresh bread and oyster shell introduce Dauvissat's 2018 Chablis Grand Cru Les Clos, a full-bodied, layered wine that's ample and elegantly muscular, girdled by bright acids and revealing more overt structure than Les Preuses at this stage. Concluding with a long, chalky finish, even in the demonstrative 2018 vintage, this will merit a bit of patience.

Domaine Vincent Dauvissat is one of the most revered names in Burgundy, often cited alongside Raveneau as the absolute pinnacle of the Chablis appellation. The family story begins in 1931, when Robert Dauvissat began bottling his own wines — a then groundbreaking practice. His son René elevated the estate to the elite of the vineyard, before Vincent took over the reins in 1989. Today, his children Étiennette and Ghislain represent the fourth generation.

The vineyard covers around 12 hectares planted on the famous Kimmeridgian marls, rich in fossilised oysters, which give the wines their characteristic saline minerality. The estate holds two Chablis Grands Crus, Les Clos and Les Preuses, as well as superb Premiers Crus — the famed La Forest, Vaillons and Séchet — rounded out by a village Chablis, a Petit Chablis and a rare red Irancy. The vines have been farmed biodynamically since the late 1990s, without any formal certification claimed.

In the cellar, the style is resolutely classical: minimal-intervention winemaking, modest yields and ageing faithful to the traditional Chablis feuillette of 132 litres, with no excess of new oak. The result is chardonnays of crystalline purity, taut, precise and endowed with an immense ageing potential. Produced at around 70,000 bottles per year and allocated in dribs and drabs, the white wines of Vincent Dauvissat are among the most sought-after in Burgundy.
