Gismondi on Wine: The 1990 is as big as Dom gets, and it will undoubtedly age well into the next millennium. For now, the fruit and weight of the vintage carry the wine, but its creamy mid-palate flavours and extract are about to burst forth. One for the millennium, but don’t wait to buy it: it’s going to sell out.

Robert PARKER - The Wine Advocate
Medium lemon-straw colour. Intensely fragrant nose with aromas of jasmine, cinnamon buttered toast, stewed apples and preserved ginger. Concentrated honey-nut, warm apple tart and spice flavours fill the mouth giving ample flesh to the firm, fine structure. The bubbles are still remarkably frisky and, in harmony with the crisp backbone of acid, make for a relatively youthful, elegant and exquisitely balanced wine. Very long finish.

Falstaff January - 2004
Falstaff
Medium yellow, smoky nose, characteristic roasted aromas, a powerful bouquet, biscuits, cocoa and hazelnut. Sublimely magnificent on the palate, regains minerality through air contact, shows an impressive sweetness on the finish. At a good starting point in its development. Great elegance.

Toast, honey, nuts and sweet citrus aromas with soft textures, moderate effervescence and a ripe, clean, creamy, fresh, apple and citrus rind finish.

Pale; elegant; noted as 'dry', crisp, very good length, lemon and with smoky aftertaste.

Fully mature, very rich nose. It was served blind and I guessed it was even older than 1990. Toasty nose and then frisky on the palate. Notably dry finish after quite a sweet palate. Into the phase of tasting like quince. Pungent. Very interesting.

Dom Perignon
Dom Perignon

Dom Pérignon is the prestige cuvée of the Moët & Chandon house, in Champagne. Born in the wake of the Hautvillers abbey, it follows a unique rule: to exist only as a vintage wine, from a single harvest year, in a blend of chardonnay and pinot noir sourced from the great terroirs around Épernay. A long ageing on lees gives it its fine bubble and its style that is at once powerful and refined.

From 1921, the very first vintage of the house, to the 2006 wine, Dom Pérignon lines up champagnes built for long ageing: the 1969, the 1993 vintage, the Dom Pérignon 1996 and the 2002 rank among the house's benchmark wines.
