Wine Enthusiast - An intense, complex nose of toast, yeast, earth, brine and mushroom opens this luxury cuvée. Medium-full and soft, by Dom Perignon standards, the palate offers subtle, light green herbs, sweet citrus and honey flavours. Lemon and lime predominate on the long, smooth finish. Classy stuff, if not possessed of the reserve or spine of the top vintages. Fortunately, that actually means it drinks better now than most Dom of comparable age.

Dom Perignon

Dom Pérignon is a legendary Champagne House and one of the most famous in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized during this period. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes can be aged for a very long time.
