Jean-Marc Quarin October - 1991
Jean-Marc Quarin
Evolved. A little dull. Brown. Correct intensity. Clean. Intense and superbly fine. Very soft and smooth balsamic and resinous note, fruity and slightly smoky with a slightly chalky zest. Very good. Clean. More intense but a tad vegetal. Returns finer on notes of sandalwood and gingerbread. Soft and subtle attack developing on a fine tactile contact and a straight-formed structure constantly accompanied by the fruit. Remarkably balanced evolution on tannins with the flavour of cherry in eau-de-vie. Long finish full of energy with a hint of fire. Lots of charm, finesse and smoothness. Quite ready to drink.

Château Canon

Château Canon is a 34-hectare wine estate located in Saint-Emilion in the Gironde. Classified as a Premier Grand Cru Classé B in the Saint-Emilion classification, Château Canon was one of the first estates in the Bordeaux region where the vine held a primary position. Although neighbouring Ausone, the wine, despite being a 1st Grand Cru, has never reached the level that might be expected of it.

The takeover of Château Canon in 1996 by Chanel nevertheless gave new life to this wine. Indeed, significant investments, particularly in the wine cellar, have improved the quality of the wine. Château Canon is known for its meticulous three-step grape selection process and there is no doubt that the work undertaken by the estate will increasingly bear fruit.
