The fully mature 1990 Canon reveals a strong earthy, spicy, cedary, herbaceous character accompanied by sweet currants, plums, and hints of dark cherries and cola. It is more superficial than it should be given the greatness of the vineyard, but the tannins have mellowed, and the wine exhibits an attractive expansiveness.

Château Canon

Château Canon is a 34-hectare wine estate located in Saint-Emilion in the Gironde. Classified as a Premier Grand Cru Classé B in the Saint-Emilion classification, Château Canon was one of the first estates in the Bordeaux region where the vine held a primary position. Although neighbouring Ausone, the wine, despite being a 1st Grand Cru, has never reached the level that might be expected of it.

The takeover of Château Canon in 1996 by Chanel nevertheless gave new life to this wine. Indeed, significant investments, particularly in the wine cellar, have improved the quality of the wine. Château Canon is known for its meticulous three-step grape selection process and there is no doubt that the work undertaken by the estate will increasingly bear fruit.
