Tasted at Pebbles/Zachy's 1982 dinner in Hong Kong. Again, this is a 1982 that I have not tasted for a number of years. It is actually a better showing than I would have predicted given its auspicious company, especially in juxtaposition with Cheval Blanc. It has a rather odd not of wild mushroom, bacon fat and truffle, although there is certainly some brettanomyces adding some of the old sweaty saddle aromas that rather knocks the aromatics sideways. The palate is medium-bodied and loose knit on the entry. To be honest, it has more elegance than I anticipated and I cannot help feeling that if it were not for the brett it would have been a "contender". But there is certainly good substance here and I suspect larger formats might have more to offer.

Colour tending towards brown, medium intensity. Complex nose, smelling of ripe fruit and cedar. It has the advantage of being pure when swirling the glass. Soft on the attack, rather voluminous compared to the others, the wine advances silky on a very good taste evoking red and white fruits. Finish still silky and long. Quite structured wine, giving a sensation of unique character, but still a little cramped, and that's a shame. Given its market price, and for good management of your cellar, I recommend you sell it.

Château Ausone produces Bordeaux grand crus with the Saint-Emilion appellation in the south of France. This estate is one of the 4 châteaux to benefit from the Premier Grand Cru Classé A classification, along with Châteaux Angelus, Cheval Blanc and Pavie.

The 7-hectare vineyard is located on the slopes of Saint-Emilion. Built on the site of the villa of the Latin poet Ausonius, the estate benefits from a south-facing exposure, terraced vineyards and a balanced and very old grape variety mix. The cellar, carved into the rock, is extraordinary. It has undergone extensive work to reinforce the solidity of the structure. As for the wines, known to take time to assert themselves, they are dense, intense and with an aromatic complexity that allows Ausone to rank among the very top estates in Bordeaux. The main grape varieties are Merlot and Cabernet Franc, with a majority of 55% Cabernet Franc.

Among the greatest vintages of Château Ausone, the 1982 and 1983 vintages are excellent. The 1995 vintage, 1998 grand cru wine and the 2008 wines are exceptional. Finally, the 2000 classified growths and the 2005 vintage are considered extraordinary vintages, with the grand crus even receiving a score of 100/100 from Robert Parker.
