Territory:
Le Mesnil sur Oger only on the heart of the Terroir and on plots selected below.
Les Vaucherots, Les Coullemets du Midi, Les Finciarts, Les Chétillons are plots with very low yields, which produce grapes of great depth, high total acidity, and low PH which allow them to be picked very late and therefore at full maturity.
Elaboration:
Grape variety: Pure Chardonnay – Mesnil sur Oger
Pressing: Slow, slightly sulphated to work the soft ones
Settling: Light settlement – Conservation of fine lees (cottony whites)
Vinification in Barrels: 100% vinified in 228 liter oak barrels. Malolactic fermentation is carried out.
Aging: on lees for 11 months, Batonnage just after end of FA
Dosage: 2g/L
