The Château Ausone vineyard covers 7 hectares and is located on the slopes of Saint-Emilion. Until 2022, the year the château will no longer be included in the classification, it is one of four châteaux classified as Premier Grand Cru Classé A, alongside Château Angelus, Château Cheval Blanc, and Château Pavie.

It benefits from a south-facing exposure, terraced vines, and an ancient and balanced grape variety. The cellar, carved into the rock, is a masterpiece, having undergone colossal work to reinforce its solidity.

History

This estate is located on the site of the villa of the Latin poet Ausonius, who lived in the 4th century. The winery has ancient origins, dating back to Roman times, and has survived the centuries to become one of the most prestigious in Bordeaux. Now run by the Vauthier family, the château continues to produce exceptional wines renowned for their density, complexity, and longevity.

The Château’s reputation became firmly established at the end of the 19th century, particularly after the 1867 World’s Fair, where Saint-Émilion’s wine production was showcased. At that time, it was already distinguished by the quality of its wines.

The wines produced

Château Ausone’s wines, renowned for their slow maturation, are characterized by great density, intensity, and aromatic complexity, making the estate one of the most prestigious in Bordeaux. The main grape varieties are Merlot and Cabernet Franc, with a 55% Cabernet Franc predominance. The resulting wine is deep, chiseled, marked by great freshness, and endowed with an exceptional velvety texture.

The Second wine : La Chapelle d’Ausone

Made under the same conditions as its predecessor, its lesser evil is that it comes from young vines later destined to produce the great wine. Alongside the Cabernet Franc, the more present Merlot amplifies a crispness blended with new touches of Cabernet Sauvignon. Elegance, however, is still there, a motto of taste once again passionately defended.

Food and wine pairing

Château Ausone pairs wonderfully with dishes such as roast capon, sautéed quail or confit duck legs.
