Classified as a Premier Grand Cru Classé A, it is renowned for the power of its wines, their depth, and their remarkable ageing potential. Its vineyard benefits from a mosaic of terroirs dominated by limestone, planted with Merlot, Cabernet Franc, and Cabernet Sauvignon. This identity is also rooted in a long history, profoundly reshaped from the late 1990s onward by the Perse family.

Château Pavie, a Historic Estate in Saint-Émilion

The history of Château Pavie is closely intertwined with that of Saint-Émilion. The slopes of Pavie and Ausone are among the sites where vines are believed to have been planted as early as Roman times. Before becoming a vineyard, the Pavie hillside was notably known for its red-fleshed peaches, known as “pavies”, which are said to have given the site its name. The area’s winegrowing vocation gradually developed, and by the 19th century Pavie was already regarded as one of Saint-Émilion’s important estates. From 1873 onward, Ferdinand Bouffard played a key role in shaping the property by progressively bringing together several plots. After his death, the estate changed hands several times before being acquired in 1943 by Alexandre Valette. In the first official classification of Saint-Émilion wines, Château Pavie was awarded the rank of Premier Grand Cru Classé B.

A major turning point came in 1998, when Gérard and Chantal Perse acquired Château Pavie. Extensive work was undertaken both in the vineyard and in the cellars to make the most of the estate’s diverse terroirs. This period marked the property’s steady rise, culminating in its promotion to Premier Grand Cru Classé A in 2012. The 2022 Saint-Émilion classification confirmed Château Pavie in this prestigious category, alongside Château Figeac. Gérard Perse passed away in July 2025, leaving behind a profoundly transformed estate. Family continuity remains firmly in place through Chantal Perse, their daughter Angélique, and Henrique Da Costa, who had already been closely involved in the family estates for many years.

The Terroir of Château Pavie in Saint-Émilion

The character of Château Pavie wine is inseparable from its geographical setting. The vineyard is located on Bordeaux’s Right Bank, southeast of the village of Saint-Émilion. Around 42 hectares of contiguous vines occupy a particularly complex landscape comprising a plateau, a slope, and the foot of the slope. This diversity of soils and elevations makes it possible to match each grape variety with the plots where it can best express its qualities.

On the higher ground lies the limestone plateau, situated at approximately 85 to 110 metres above the level of the Dordogne River. The clay-limestone soils rest on asteria limestone, which can retain moisture accumulated during winter and help preserve freshness during dry periods. Merlot thrives particularly well in these conditions. Lower down, the south-facing slope combines clay and limestone. Cabernet Franc benefits here from deep rooting and good drainage. Finally, the foot of the slope features lighter sandy-clay soils with patches of gravel, particularly well suited to Cabernet Sauvignon. This combination of terroirs helps bring together ripe fruit, freshness, tannic structure and mineral expression.

Merlot, Cabernet Franc and Cabernet Sauvignon: The Grape Varieties of Château Pavie

The current vineyard plantings at Château Pavie are made up of approximately 50% Merlot, 30% Cabernet Franc and 20% Cabernet Sauvignon. These vineyard proportions should not be confused with the final blend of the wine, which varies according to the characteristics of each vintage.

Merlot generally brings flesh, density and aromatic richness. Cabernet Franc contributes freshness, finesse and length, while the relatively high proportion of Cabernet Sauvignon for Saint-Émilion adds structure and ageing potential. This complementarity has become an essential part of the château’s contemporary identity.

The 2016 vintage illustrates this approach with a blend of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon, while Château Pavie 2020 combines 50% Merlot, 34% Cabernet Franc and 16% Cabernet Sauvignon. The composition of the wine therefore remains directly linked to the conditions of each year and the ripeness achieved in each individual plot.

Viticulture and Winemaking in the Service of the Terroir

In the vineyard, the work is focused on achieving even and precise ripeness. Green harvesting, leaf removal and plot-by-plot monitoring precede manual harvesting with grape sorting. In the cellars, vinification takes place notably in temperature-controlled wooden vats, while malolactic fermentation may be carried out in barrels.

Ageing practices have evolved over the years. Château Pavie 2000, for example, was aged for 26 months in new barrels, while the 2020 vintage was aged for 18 months with 75% new oak. More broadly, the estate’s recent evolution has moved towards a more measured use of oak, more precise extraction and a greater emphasis on freshness, without abandoning the density historically associated with Pavie. This approach allows the wine to retain its power while giving greater expression to the limestone terroir, tension and precision of the fruit.

What Is the Style of Château Pavie Wine?

Château Pavie Saint-Émilion is traditionally distinguished by its dense texture and substantial tannic structure. In its youth, the wine can display a deep colour along with intense aromas of blackberry, blackcurrant, black cherry or plum, complemented by floral, spicy, smoky and sometimes graphite-like nuances.

With age, this power gradually evolves into a more complex expression. Fresh black fruit gives way to notes of candied or dried fruit, tobacco, leather, undergrowth, spices and truffle. Limestone also plays an important role in the wine’s sense of freshness and in the often persistent, slightly saline finish that characterises many of the estate’s great vintages.

This concentration explains Château Pavie’s ageing potential. In the finest vintages, and when bottles have been stored in good conditions, the wine can evolve over several decades. The Guide Hachette notably describes the 2016 vintage as a true wine for long-term ageing, supported by its density and tannic structure.

Arômes de Pavie, the Estate’s Second Wine

The estate also produces Arômes de Pavie, offering a different expression of the terroir’s identity. As with the grand vin, the grapes are harvested by hand, while vinification focuses on fruit precision and gentle extraction. Depending on the vintage, both the blend and the ageing process are adjusted to preserve the balance and character of each year.

Arômes de Pavie is generally more approachable in its youth than the grand vin, while still retaining genuine structure and ageing potential. It offers another interpretation of Pavie’s terroirs, centred on fruit, freshness and texture.

The Great Vintages of Château Pavie

For enthusiasts of old Château Pavie, there is a particularly rich history to explore. Among the older vintages, Château Pavie 1982 and Château Pavie 1989 are among the years regularly sought after by lovers of mature Bordeaux. These bottles also offer an opportunity to discover Pavie’s style before the transformation initiated by the Perse family from 1998 onward. SoDivin also holds a selection of older vintages from the château spanning several decades. Château Pavie 2000 then stands out as a major milestone. The first great vintage of the Perse era, it received 100/100 from Robert Parker and is characterised by considerable concentration, great depth and extended ageing potential. More than twenty years after its release, it remains an important reference for understanding the estate’s transformation and rise in stature.

Château Pavie 2010 also ranks among the estate’s powerful and structured vintages. Concentrated, marked by black fruit and a mineral backbone, it has an architecture particularly well suited to long-term ageing. The 2012 vintage, meanwhile, holds historical significance, as it coincided with Pavie’s promotion to Premier Grand Cru Classé A. Despite a more challenging growing season, the estate produced a dense, long wine praised for its balance. Château Pavie 2016 is another major contemporary reference. Produced from a hot, dry summer followed by favourable conditions for autumn ripening, it combines richness, depth and freshness. The wine notably received a score of 100/100 from Lisa Perrotti-Brown for Robert Parker and has a structure that promises several decades of development.

Finally, the 2020 vintage reflects Château Pavie’s more recent stylistic evolution. The wine retains the density expected of the estate, but the balance between Merlot, Cabernet Franc and Cabernet Sauvignon, together with more restrained ageing, places greater emphasis on precision, freshness and a clearer expression of the terroir.

View All Château Pavie Wines in Stock

What Food Pairings Go Well with Château Pavie?

The power, depth and structure of a Château Pavie call for dishes capable of matching its intensity without overwhelming its complexity. In its youth, when the tannins are still pronounced and the fruit particularly concentrated, Château Pavie pairs very well with rib of beef, roast beef fillet, rack of lamb or game in sauce. Dishes featuring mushrooms, porcini or truffle also echo the earthy and spicy nuances that gradually emerge in the wine. With an older vintage of Château Pavie, it is preferable to choose more delicate cuisine in order to respect the finesse gained over time. Roast veal, pigeon, poultry with mushrooms or a lightly truffled dish can then make excellent pairings. The most evolved vintages often develop notes of undergrowth, leather, tobacco and spices, which pair particularly well with autumnal cuisine and dishes with deep, savoury flavours.

<div class="wp-block-column is-layout-flow
